The term "low fat desserts" almost seems like an oxymoron, doesn't it? It's not though. Even if you're losing weight you can still have your cake and eat it too. What follows are some suggestions for baking your own delicious, decadent, low fat desserts.

Low Fat Dessert Recipes

Here are some wonderful recipes for low fat desserts including Angel Food Cake, Chocolate Walnut Cake, Banana Split Cake, Light Vanilla Cheesecake, Rhubarb-Strawberry Pudding and Blueberry Cobbler.

Angel Food Cake

Ingredients:

  • 1/2 cup powdered sugar
  • 1 cup all purpose flour
  • 1 1/2 cup egg whites - slightly beaten
  • 1 1/2 teaspoons cream of tartar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon almond extract
  • 1 cup granulated sugar

Preparation:

  • Preheat oven to 375.
  • Mix powdered sugar and flour and set aside.
  • In separate mixing bowl, beat egg whites, cream of tartar, vanilla extract, salt, and almond extract at high speed until well blended.
  • Gradually add granulated sugar, while beating at high speed. Beat just until sugar is dissolved and egg whites stand in stiff peaks. Do not scrape sides of bowl during beating. *Fold in flour mixture, a little at a time, with a rubber spatula until flour just disappears. *Pour mixture in unprepared 10" tube pan.
  • Bake for 35 minutes.
  • Remove from oven and set upside-down until cooled.

Serve with fresh cut fruit or berries.

Chocolate Walnut Cake

Ingredients:

  • 1 package reduced fat yellow cake mix
  • 1 cup fat-free plain yogurt
  • 3/4 cups skim milk
  • 2 tablespoons olive oil
  • 2 whole eggs
  • 3 ounces fat-free vanilla pudding mix
  • 1/4 cup reduced fat chocolate chips
  • 1/4 cup walnuts, toasted

Preparations:

  • Preheat oven to 350.
  • Prepare cake pan(s) with cooking spray and set aside.
  • In a mixing bowl, combine cake mix, yogurt, milk, oil, eggs, and pudding mix. Mix well.
  • Fold in chocolate chips and walnuts.
  • Pour into prepared pan.
  • Bake for 55 minutes.

Banana Split Cake

Ingredients:

  • 1 Store bought (or homemade) Angel food Cake
  • 1 Package of fat-free, sugar free instant vanilla pudding, prepared.
  • 4 medium bananas
  • 4 cups of strawberries
  • 2 tubs of fat free whipped topping

Preparations:

  • Prepare the pudding as directed.
  • Cut all fruit into bite sized chunks.
  • Cut the angel food cake into bite sized chunks.
  • Separate all ingredients in half.
  • Layer ingredients as follows: half of the angel food cake, half of the pudding, half of the bananas, half of the cool whip, half of the strawberries. Repeat.

Vanilla Cheesecake

Ingredients:

  • 11 crushed vanilla sandwich cookies
  • 3 tablespoon melted butter or margerine
  • 16 ounces low fat or fat free cream cheese
  • 12 ounces of tofu, drained
  • 1/2 cup Splenda
  • 1/4 cup vanilla-flavored liqueur
  • 2 tablespoons cornstarch
  • 2 teaspoons vanilla extract
  • 12 egg whites

Preparations:

  • Preheat oven to 225.
  • In a large bowl combine cream cheese, tofu, Splenda, liqueur, cornstarch, and vanilla extract.
  • Beat until smooth.
  • Stir in egg whites.
  • Pour the cream cheese mixture over the crust.
  • Bake at 225F for 1 hour and 20 min or until center is set.
  • Remove the cake from the oven and run a knife around

the inside edge of the pan.

  • Turn the oven off; return the cake to the oven for an additional 2 hours.
  • Chill overnight, do not cover.

Easy Rhubarb with Strawberries

Ingredients

  • 1/4 cup sugar
  • 1/4 cup orange juice
  • 2 cups fresh or frozen rhubarb, thawed and cut into ½" thick pieces
  • 1 tablespoon cold water
  • 2 teaspoons cornstarch
  • 1 cup fresh strawberries, sliced

Directions

  1. In medium saucepan, combine sugar and orange juice. Bring to a boil; stir in rhubarb slices. Return to boil; reduce heat and simmer, covered, for 5 minutes or until rhubarb is tender.
  2. Drain rhubarb, reserving syrup. Add water to syrup to measure 2/3 cup. Return syrup to pan. Stir together cold water and cornstarch; add to syrup and stir well.
  3. Cook until thickened and bubbly. Cook 2 more minutes. Remove from heat.
  4. Gently stir in rhubarb and strawberries. Cool at room temperature for 30 minutes.
  5. Cover and chill for at least 2 hours or up to 4 hours.

Ingredients

  • 5 c. fresh blueberries
  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon lemon rind, finely grated
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup fat-free vanilla yogurt
  • 2 tablespoon fresh lemon juice
  • 2 tablespoon margarine, melted
  • 1 teaspoon vanilla extract
  • 2 large egg whites or egg substitute for baking

Directions

  1. Preheat oven to 400 degrees. Coat a 13" x 9" baking dish with cooking spray.
  2. Combine blueberries, sugar, 2 tablespoons flour, lemon rind, lemon juice and vanilla in large bowl. Stir gently and spoon into prepared baking dish.
  3. For topping: Combine 1 cup of flour, baking powder and baking soda in a large bowl; stir well.
  4. In medium bowl, combine yogurt, 2 tablespoons lemon juice, margarine, 1 teaspoon vanilla and egg whites. Add to dry ingredients and stir until just moistened.
  5. Drop dough by tablespoonfuls onto blueberry mixture.
  6. Bake for 30 minutes or until filling is bubbly.

Baking Substitutions

If you'll be creating your own low fat desserts, you might try substituting fattening items with some that are a bit healthier.
