Recipe for Gluten-Free Communion Bread

Many churches are beginning to allow parishioners to bake and share their own communion breads. If you suffer from Celiac or a gluten sensitivity, you don't need to miss out on this exchange. Bake your own gluten-free communion bread using gluten-free bread flour; your friends and neighbors may never know the difference.

Gluten-Free Communion Bread Recipe

This recipe produces seven flat loaves of communion bread. The texture is slightly chewy; if you prefer your bread to be crisper, roll it out a little thinner and bake it a little longer.

Ingredients

  • 5 cups gluten-free bread flour (if your bread flour does not contain xanthan gum, add 1 teaspoon to the recipe)
  • 2 cups hot water
  • 2 tablespoons olive oil
  • 3 tablespoon honey
  • 1 tablespoon salt

Instructions

  1. Place the water, olive oil, honey and salt into a stand mixer with a dough hook.
  2. Mix until the ingredients are well combined.
  3. Keep the dough hook turning and add in the bread flour a little at a time. Keep adding the flour until the dough pulls cleanly away from the sides of the mixer.
  4. Continue mixing the dough for 5 to 7 minutes.
  5. Divide the dough into seven small balls.
  6. Place each ball on a sheet of parchment paper and roll out until 1/4-inch thick.
  7. Take the tines of a fork and pierce the top of each loaf. You may pierce in the shape of a cross, or make random piercings. The piercing is important as this will help prevent the dough from rising.
  8. Bake the loaves at 400 degrees for 15 to 20 minutes.
  9. Let cool completely. The loaves can be wrapped and frozen if desired.
